Parmesan of zucchini (or eggplant) in my way

 

Make tomato sauce.

Check and wash the zucchini (or eggplant); Cut them with the mandolin until they get the same slices (for eggplants it is advisable not to use the mandolin).

 

  

 

Fry the zucchini in plenty of hot seed oil, a little at a time to avoid lowering the oil temperature; Dry with kitchen paper.

In a baking pan spread some tomato sauce and start making a layer of zucchini, put sauce, plenty of grated cheese and make another layer of zucchini. Add in some layers pieces of thin slices of smoked scamorza.

 

  

 

Continue until the end of the ingredients; Over put tomato sauce and plenty of grated cheese.

Bake at 190 ° C until the surface cheese is melted.

 

There are no quantities of ingredients because it seems superfluous.
