Boil spinach; drain and mash until all water is removed. Chop with a knife and, in a bowl, combine the ricotta, grated cheese, eggs; salt and pepper, grate a little nutmeg (to taste). Roll out the first roll of dough, make it slightly thinner with a rolling pin, and put the mixture of spinach a little bit in the middle, the remaining in a circle, as in the picture

 

 

Pull another roll of dough, make it slightly thinner as previous, cover mixture of spinach with caution, for they coincide. With hands crush slightly to seal the dough with spinach.

 

 

 

With a fork crush the board (better if there is not much empty board, possibly cut a bit with the wheel).

Put a cup in the center, and with a knife to split the ring sectors (about 16)

With a great deal of sensitivity, turn 90 ° each sector:

 

 

Bake at 180 degrees until done. Be careful when you put the cake in the pot, because the petals tend to fall off.
