Risi e bisi

(rice and peas)

 

Chop the onion and cook it with oil and 30 gr. of butter; add the bacon and brown. Add the rice to toast it (see) and then cook adding broth a little at a time. Salt.

When the rice is almost cooked add the peas and chopped parsley.

When cooked, turn off the heat and whisk with the remaining butter and cheese; pepper to taste.

Notes: I used frozen peas, using dried peas peas add them with rice.
