Cake typical of Catania, of which St. Agatha is the patron: they remember the martyrdom.

 

Mix the butter with the icing sugar. Add the sifted flour, a pinch of salt, vanilla and mix; add the lightly beaten egg and continue stirring the mixture until a ball: Wrap the dough in plastic wrap and put in the fridge to rest for at least half an hour.

Meanwhile prepare the cream with cottage cheese, powdered sugar, candied fruit and chocolate chips; add a tablespoon of water of orange blossom, to taste, half a teaspoon of cinnamon. Mix thoroughly mixing the ingredients.

Pull the dough in the height of about 2 / 2.5 mm. (the trick is to put the dough between two flat strips of wood to the desired thickness and roll a rolling pin on the two strips, unless you have those rolling pins with the discs adjustable). With a pastry cutter or a knife to cut out circles of dough in diameter such as to line the molds hemispherical (very comfortable are those multiple silicone, but you must place them in a pan). With another pastry cutter to cut discs with a diameter equal to the base of the molds.

Bake at 190 ° for the time it takes for the oven. Allow to cool.

Fill the cups with the cream cheese and cover with the disks: make them adhere to the cream slightly in excess and fill the holes with the cream.

Prepare the icing: mix the icing sugar with a tablespoon of lemon juice, a tablespoon of orange flower water and pour drip milk, stirring constantly, you must obtain a glaze not too runny. Wait a few minutes and when the icing is quite substantial, cover half spheres, with the curvature at the top.It is advisable to do this on a wire rack to recover the excess glaze. Garnish with half a candied cherry. If you want you can color the icing with red dye, to have a pink frosting.
