Schiacciata fiorentina

 

In a bowl, whisk the eggs with the sugar until the mixture "writes". Add slowly the milk, stirring from the bottom up not to remove the compound; add the olive oil, orange juice and zest. Add the yeast and continue to mix.

Pour the mixture into a rectangular pan 20 x 24 cm and bake at 180 degrees for about 20 minutes (depending on oven). Sprinkle with plenty of sugar.
