PENNE with smoked salmon

 

 

Do soften the shallots (or onion) in butter, add 200 gr of smoked salmon cut into strips; just brown and blend with vodka. Add 200 ml of cream and, to taste, some grated nutmeg.

Whisk the remaining salmon with dill twig and the remaining cream. Add this to the remaining whipped cream with salmon.

Cook pasta in salted water, drain well and toss in the pan of sauce. A pleasure sprinkle with dill (or chives), finely chopped. Garnish with a sprig of dill and a spoonful of caviar (since it's new year, I put a bit of pomegranate for good luck!).
