Penne alla Norma

 

Cut the eggplant into thin slices and soak them at least 15 minutes (if you want to put less spicy salt, but do not peel them, otherwise they lose all the taste!). Meanwhile, make the tomato sauce in his own way (past, pulp, spicy: as you prefer). Fry the eggplant (for dietary reasons you can do to the plate). Cook the penne in salted water, drain, add the eggplant and season with a hearty tomato and grated ricotta cheese.
